COOKING AROUND THE WORLD: THAI TOM YUM SOUP

Things are getting pretty warm here in Colombia, but that's no excuse not to eat soup. I'm the kind of person that can eat soup all year round, especially when it's a delicious soup like Tom Yum.

Tom Yum is one of the better known Thai recipes and can be found on the menu of every Thai restaurant. It is loaded with shrimp, mushrooms, sour, spicy, savory, and a whole bunch of deliciousness in every bite. I made this recipe when I was living in Hua Hin Thailand and took a local cooking class. I've taken a couple cooking classes in Thailand and have talked about how fun they are, but they really are the best foods you will ever eat while there. If you ever travel to Thailand, promise me you will take a cooking class. So here is the recipe for this authentic, easy and delicious Tom Yum soup.

Makes 2 Servings

Ingredients

  • 3 cups seafood stock
  • lb large shrimp
  • 1 stalk fresh lemongrass, slicked in 2 inches
  • 4 kaffir lime leaves
  • 1/2 inch fresh ginger
  • 1 red chilies
  • 3 TBS fish sauce
  • 3 tbs freshly squeezed lime juice
  • 1 tsp brown sugar
  • 1 tbs red curry paste
  • 8 oz straw mushrooms

Directions

  1. In a medium pot, bring the seafood stock to a boil over medium heat.
  2. Add the lemongrass, lime leaves, ginger and red chile peppers. Lower the heat to medium/low. Cover the pot and simmer for 20 minutes.
  3. Uncover the pot and add the fish sauce, brown sugar and curry paste to the broth. Stir and simmer for 5 minutes.
  4. Add the mushrooms nd shrimp.
  5. Add lime juice. (if you add the lime juice too early, the soup can turn bitter).
  6. Cook for 6-10 minutes, or until the shrimp are cooked throughout.
  7. Serve hot.
